Laboratorija za molekularnu mikrobiologiju poseduje jedinstvenu bakterijsku kolekciju koja obuhvata bakterije mlečne kiseline (BMK) izolovane kako iz fermentisanih mlečnih proizvoda proizvedenih u domaćinstvima po tradicionalnim recepturama tako i BMK izolovane iz ljudi.

Iz kolekcije se selektuju potencijalni probiotički sojevi čije se karakteristike izučavaju primenom molekularnih metoda in vitro, kao i u in vivo ogledima na laboratorijskim životinjama. Na ovaj način se ispituju molekularne osnove blagotvornog delovanja selektovanih probiotika na specifična oboljenja čoveka, kao što su inflamatorne bolesti creva i dijabetes. Krajnji cilj ovih istraživanja je primene živih probiotika u formi funkcionalne hrane i pronalazak bioaktivnih jedinjenja koji ostvaruju pozitivan efekat na ljudsko zdravlje. Zbog potrebe za primenom selektovanih BMK u proizvodnji fermentisanih mlečnih proizvoda sa geografskim poreklom deo istraživanja LMM je posvećen izučavanju proizvodnje i mehanizama delovanja proteinaza i bakteriocina.

Usled stalne potrebe za razvojem istraživanja i usluga, konstrukcija molekularnih oruđa kao što su plazmidi, kozmidi i ekspresioni vektori predstavlja jedan od prioriteta LMM.

LMM je deo svojih kapaciteta posvetila izučavanjima molekularne osnove rezistencije na antibiotike kliničkih izolata, kao i njene diseminacije i evolucije. Osim toga, posebna pažnja je posvećena izučavanju bakterija koje kolonizuju pacijenate obolelih od retkih bolesti, kao što je cistična fibroza.

Laboratorija pruža usluge molekularne identifikacije i genotipizacije bakterija, konstrukcije jedinstvenih starter kultura za probiotičke mlečne napitke, jogurte i polutvrde sireve kao i istraživanja prilagođena klijentu.
