FIELD OF SCIENTIFIC INTEREST

Isolation, characterization and analysis of biological activities of phenolic compounds from plant raw materials and food products. Investigation of transformations of phenolic compounds during in vitro digestion in the presence of complex nutrient matrices and the impact on their biological activities. Lactobacillus bacteria enzymes involved in the degradation of polyphenolic compounds and proteinase inhibitors in plant material - application in the production of silage starter. Application of selected strains of the bacterial species Brevibacillus laterosporus in the biological control of infectious diseases of bees and phytopathogenic fungi.
